Based on national reports from Denmark, Finland, Italy and Norway, describing the school meal systems and to which extent organic food is integrated there, this report identifies differences between the four countries and experiences made with organic food procurement and the dissemination of organic ingredients in school meals. The policies and practice of school meal provision in Germany are currently in a dynamic transition led on by the introduction of a fulltime school system. One of the many issues being highlighted is its potential to increase the use of organic produce. The research project “innovative Public Organic food Procurement for Youth” (iPOPY; www.ipopy.coreportal.org) analyses the entire system. Results of the first comparison between Italy, Finland, Denmark, and Norway are presented here, as a background to discuss the German situation. This paper is dealing with consumer’s attitudes to organic fish. It is part of the research project RobustFish. The overall aim of RobustFish was to strengthen the development of Danish organic aqua culture. Surveys performed among consumers showed that the knowledge about sustainability and organic fish is relatively fragmentary; e.g. stories from the media detached from the context “overfishing”, not healthy fish farmed in Asia etc. Very few consumers were able to identify specific rules for organic fish, and often they were mixed up with the MSC certification. Most part of the Danish organic fish production is currently exported to Germany and due to this the research project RobustFish has investigated the perception of organic fish among German consumers. In cooperation with Fachhochschule Münster Aalborg University has made a survey among German consumers on how they perceive organic fish. The investigations showed that the perception of organic fish is influenced by their general perception of farmed fish and their perception of agricultural production. The introduction of organic food offers new dimensions to school meals, and schools offer new dimensions to organic food – when tackled properly. In this paper we present findings from the iPOPY research project that is funded by the ERA-Net, CORE-Organic-I funding body network. Den overvejende del af den danske økologiske fiskeproduktion afsættes i dag i Tyskland, og det er også baggrunden for, at forskningsprojektet RobustFish har analyseret tyske forbrugers opfattelse af økologiske fisk. I samarbejde med Fachhochschule Münster har Aalborg Universitet interviewet en række tyske forbrugere om deres opfattelse af økologisk fisk. In several standards, guidelines and publications, organic food processing is strongly associated with "minimal processing" and "careful processing". The term "minimal processing" is nowadays often used in the general food processing industry and described in literature. The term "careful processing" is used more specifically within organic food processing but is not yet clearly defined. The concept of carefulness seems to fit very well with the processing of organic foods, especially if it is reflected in a broader sense. Although there is no clear common definition of the concept of "careful processing", "care" is an essential value in organic food production encompassing care for the product, the environment and the people. |

Økologi er i de senere år kommet på dagsordenen i forhold til offentlige indkøb, særligt i forhold til mad i institutioner og skoler. I mad til vuggestuer og børnehaver er økologi allerede udbredt, mens økologisk skolemad særligt findes i hovedstadsområdet. The requirements for processing in standards and regulations are only related to technical sub-jects directly oriented towards the production of the products. A broader view on social aspects in the processing company or the environmental influence of the processing units is not part of any governmental regulations for organic foods. In general it can be stated that the EU-Regulation 2092/91, with the exception of having rules for the use of additives and processing aids, no significant preferences or only tendencies regard-ing the possible ways to regulate or harmonise different aspects of organic food processing in a sustainable direction, have been identified. |

En analyse af forbrugernes opfattelse af økologisk fisk viste bl.a. at, op attelsen af økologisk fisk var påvirket af den generelle opfattelse af opdrættet fisk. Ofte var opdrættet fisk forbundet med noget negativt - på linje med industrialiseret landbrug og i modsætning til ”vilde fisk”. Meget få forbrugere var i stand til at identificere regler for økologisk fisk og ofte sammenblandedes de med MSC, ASC og andre certificeringer. Der er således behov for en systematisk kommunikationsplan for økologisk fisk med henblik på at øge forbrugernes bevidsthed om hvad økologiske ørred er; at det er opdrættet, og at økomærket ikke er det samme som miljømærkerne MSC og ASC. |

Fiskeproducenten var bekymret for om produktionen kunne følge med en evt. kraftig stigning i efterspørgslen efter økologisk ørred, og forslog en koordineret indsats, f.eks. en årlig kampagne omkring høst og slagtning. Det blev foreslået at tilskynde til øget brug af økologisk fisk i offentlige institutioner (skoler, hospitaler, kantiner osv).
